Who doesn't love Bread pudding?

Bread pudding.....hmm!  I had never made one before in my lifetime but after taking a bite of what I made today,  I couldn't resist waiting any further to let you all know how easy it is and how it irresistible it is once it is all done.

I love bread puddings, but not the ones that have too many spices or dried fruits.  Here is  a very very simple recipe.  It can't  get any easier than this one. This is more of a breakfast pudding than a dessert type. But it was the perfect one for me. Or should I say that one cannot go wrong with Ina Garten's recipe.

I actually made this today to surprise my son for his snack.  It took me hardly 10 minutes to put everything together and then took about 60 minutes to bake and was ready by the time I left to pick him up from school. Here it goes....

Adapted from Ina Garten

INGREDIENTS:
  • 1 loaf of Brioche bread
  • 5 eggs
  • 2 egg yolks
  • 2 1/2 cups of half-and-half
  • 1/3 cup honey (I added a little more for sweetness)
  • 1 1/2 tsp of vanilla extract
  • few golden raisins
  • salt
Pre-heat the oven to 350 degrees F. Whisk the eggs, milk, honey, salt, and vanilla extract. Slice the bread into  1" thick slices.  Layer them flat in an oval baking dish.

Place the raisins under the slices of bread.  Pour the mixture on the top of the bread slices.  Press the slices gently so that they soak up the liquid.  Leave it aside for 10 -15 minutes to get soaked. Bake it for 40-60 minutes or until the custard is done.  Once it is done, remove from the oven and  let it cool for some time before serving.

Well, it was the PERFECT snack for my kids and myself.  Couldn't have been any better;-)
