I got pulled into making this pie basically because my sister had a pie contest in her company today and she wanted me to find her a simple and easy pie recipe.
Although I was only planning to email her this recipe, my kids coaxed me into baking this pie for them. Not being a pie fan, the only thing that convinced me to bake this pie was its simplicity or should I say, it really was "as easy as a pie"!
Thanks to Whole Foods, this recipe won her the first prize.
Ingredients:
- 1/2 cup sugar
- 2 large eggs
- 1 tsp vanilla extract
- 1 pint blueberries
- 1 frozen 9- inch or white pie shell, thawed
- powdered sugar for garnish
Preheat the oven to 350 degrees. Whisk together sour cream, sugar, eggs, and vanilla in a bowl. Gently stir in the blueberries.
Pour this mixture into the pie crust and bake for 55-65 minutes or until the custard is set in the middle.
Allow the pie to cool to room temperature. If desired, chill before sprinkling with powdered sugar and serve.
